Requesting more money than the signed contract?

Help please (in Kansas City, MO if it matters). I recently hired a contractor to build out an office for me. The lady that runs the company came to the site, made notes, and submitted a bid for $8,431, with me providing all materials, some of which had already been purchased. I agreed, and we signed a contract, and I paid $4,000 down with the remainder due at completion, with the end date today (2/28). They ran into some plumbing and electrical issues, and made several trips to the local Home Depot to complete phone sales for more materials. Yesterday, she told me that since they didn’t plan for the plumbing and electrical issues, that it may take longer (no biggie), and today, she told me that the final invoice would be more because she’s “losing money” on this deal. She then turns around and tells me that they’ll be completed tomorrow. Am I getting jerked around? How is she losing money when they will be done 24 hours after the contract stipulates, and I told her I won’t even enforce the $50 per day deduction for going over the time? Am I somehow required to pay extra money over what we both signed? I don’t feel like I’m responsible for unknown plumbing or electrical issues, and nowhere does it mention I’m responsible for it, especially when she had free reign of the space when she was bidding it. The only thing I can see is a clause that says “the parties agree to inform each other of issues that may interfere with either party’s ability to meet at obligations under this agreement so that the party’s have the time and resources to address and resolve the issue in order to keep the project on budget and deadline”
